2 medium delicata squash

3 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon ground cinnamon

1/4 cup pecans or walnuts, chopped

    Prepare the Squash: Rinse the delicata squash under cold water and scrub them clean. Carefully cut each squash in half lengthwise, scoop out the seeds using a spoon, and then slice the squash into 1/2-inch half-moons. There's no need to peel the delicata squash, as the skin is edible and adds a delicious flavor.

      Make the Glaze: In a small bowl, combine the olive oil, maple syrup, ground cinnamon, ground nutmeg, cayenne pepper (if you're using it), and a generous pinch of salt and pepper. Whisk these ingredients together until you have a smooth, well-blended glaze.
