2 cups vegetable broth

2 cups mixed root vegetables (such as carrots, parsnips, and sweet potatoes), diced into bite-sized pieces

1 medium red onion, thinly sliced

2 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon balsamic vinegar

1 teaspoon dried thyme

Salt and pepper to taste

1/4 cup fresh parsley, finely chopped

1/4 cup feta cheese, crumbled (optional)

Preheat the oven: Begin by setting your oven to 400°F (200°C) to allow it to reach the desired temperature while you prepare the vegetables.

    Prepare the vegetables: In a large mixing bowl, add the diced root vegetables and sliced red onion. Drizzle with olive oil and maple syrup, then add balsamic vinegar, dried thyme, salt, and pepper. Toss everything together until the vegetables are evenly coated in the mixture.
