1 lb (450g) sweet potatoes, peeled and cut into 1-inch cubes

1 lb (450g) maple-flavored breakfast sausage (or your favorite sausage variety)

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

2 tablespoons olive oil, divided

1 teaspoon smoked paprika

1/2 teaspoon ground cinnamon

Salt and pepper, to taste

4 large eggs

Fresh parsley, chopped, for garnish

Optional: Slices of avocado for serving

Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes along with a sprinkle of salt and pepper, and the smoked paprika. Sauté the sweet potatoes for about 10-15 minutes, stirring occasionally, until they are tender and beautifully caramelized. Once cooked, transfer the sweet potatoes to a plate and set aside.

    Prepare the Sausage: In the same skillet, add the remaining tablespoon of olive oil. Crumble the maple sausage into the skillet and cook over medium heat. Stir occasionally for about 5-7 minutes, or until the sausage is browned and fully cooked through, breaking the meat into bite-sized pieces as it cooks.

      Add Vegetables: After the sausage is cooked, add the chopped onion, diced red bell pepper, and minced garlic to the skillet. Sauté the mixture for about 5 minutes, or until the onions become translucent and the bell pepper is tender and fragrant.

        Combine Ingredients: Return the cooked sweet potatoes to the skillet with the sausage and vegetables. Stir to combine all the ingredients thoroughly. Sprinkle in the ground cinnamon and adjust the salt and pepper to taste. Cook for another 2-3 minutes to heat everything through and let the flavors meld together.
