4 large eggs

1/2 cup cooked breakfast sausage, crumbled

1/2 cup shredded mozzarella cheese

1/4 cup diced bell peppers (any combination of red, green, or yellow)

1/4 cup diced cooked bacon (optional)

1/4 teaspoon garlic powder

Salt and black pepper to taste

1 tablespoon olive oil or cooking spray

Marinara sauce (for serving)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with olive oil to prevent sticking.

    Prepare Biscuit Base: Take each biscuit from the can and place it on a clean, flat surface. Using your hands or a rolling pin, gently flatten each biscuit to about 1/4 inch thick, creating small round bases. Arrange the flattened biscuits on the prepared baking sheet.

      Cook the Eggs: In a medium mixing bowl, crack the eggs and whisk them vigorously until well blended. Season the eggs with a pinch of salt, black pepper, and garlic powder. Heat a drizzle of olive oil in a non-stick skillet over medium heat. Once the oil is hot, add the whisked eggs to the skillet, and scramble them gently until just set, about 3-4 minutes. Remove the skillet from the heat and set aside.
