1 pound ground chicken

1 tablespoon olive oil

1 teaspoon taco seasoning

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and freshly ground black pepper, to taste

12 mini flour tortilla shells

1 cup shredded cheddar cheese

½ cup diced fresh tomatoes

½ cup shredded crisp lettuce

¼ cup sour cream

¼ cup salsa

Fresh cilantro leaves, for garnish

Instructions
 

Cook the Chicken: In a large skillet, pour in the olive oil and heat over medium heat. Once hot, add the ground chicken. Cook, stirring frequently, until the chicken is browned and no longer pink, about 5-7 minutes. Once cooked, drain any excess fat from the skillet.

    Season the Chicken: With the skillet still on the heat, add the taco seasoning, garlic powder, onion powder, salt, and pepper to the cooked chicken. Stir well to combine all the spices into the meat, cooking for an additional 1-2 minutes to deepen the flavor. Remove the skillet from the heat.

      Prepare the Tortilla Shells: Preheat your oven to 375°F (190°C). While the oven is heating, line a baking sheet with parchment paper. Lay the mini tortilla shells out on the prepared baking sheet, arranging them evenly.

        Assemble the Melts: Take a generous spoonful of the seasoned chicken mixture and fill each mini tortilla shell. Afterward, sprinkle shredded cheddar cheese over the top of the chicken in each shell.
