Ingredients

8 slices of sourdough bread

8 ounces of sharp cheddar cheese, sliced

16 cherry tomatoes, halved

4 tablespoons unsalted butter, softened

Fresh basil leaves (optional, for garnish)

Salt and black pepper, to taste

Skewers (wooden or metal)

Instructions

Prepare the Skewers: If using wooden skewers, soak them in water for about 30 minutes before grilling. This prevents them from burning and ensures they retain their structure while grilling.

Make the Grilled Cheese: Take two slices of sourdough bread for each mini sandwich. Place two slices of sharp cheddar cheese between the bread slices, ensuring they are centered.

Butter the Bread: Generously spread the softened butter on the outer sides of each sandwich. This will create a beautifully rich, golden-brown crust as they grill.

Grill the Sandwiches: Heat a skillet over medium heat. Once it’s hot, add the sandwiches to the skillet. Grill each side for about 3-4 minutes, until the bread is a deep golden brown and the cheese is perfectly melted. Remove from heat and allow them to cool slightly before cutting.

Cut the Sandwiches: Carefully cut each grilled cheese sandwich into quarters, resulting in four small squares from each sandwich.

Assemble the Skewers: Begin to thread the skewers by placing a piece of grilled cheese on the skewer, followed by a halved cherry tomato. Repeat this process, alternating between cheese and tomatoes, until the skewer is filled. Finish with another piece of grilled cheese for a delicious finale.

Season and Garnish: Lightly season the assembled skewers with salt and black pepper to taste. For added flavor and a splash of color, place fresh basil leaves on top.

Serve: Arrange the skewers elegantly on a serving platter. These delightful bites can be enjoyed warm or at room temperature, making them a perfect portable appetizer or snack for any gathering!
