Mini Taco Cups with Cheese and Beef

1 lb ground beef

1 packet taco seasoning (1 oz)

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1 cup shredded lettuce

1/2 cup sour cream

1 package wonton wrappers (approximately 24 wrappers)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Jalapeño slices for topping (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

    Cook the Beef: In a large skillet set over medium heat, add the ground beef. Season it with salt and pepper, and cook, using a spatula to break it apart, until it’s browned evenly. This should take about 5-7 minutes. Once cooked, drain any excess fat from the skillet.

      Add Seasoning: Mix in the taco seasoning with a splash of water (approximately 2 tablespoons) to moisten the meat. Stir well and cook for an additional 5 minutes, allowing the flavors to meld according to the instructions on the seasoning packet.

        Prepare Wonton Cups: Take a muffin tin and lightly brush the cups with olive oil to prevent sticking. Press a wonton wrapper into each muffin cup to create a little cup shape, ensuring that the edges hang over the sides slightly for a charming presentation.

          Bake Wonton Cups: Place the muffin tin in the preheated oven and bake the wonton wrappers for about 8 minutes, or until they are golden and crispy to the touch.

            Fill Wonton Cups: Once baked, remove the muffin tin from the oven. Carefully fill each wonton cup with a generous spoonful of the savory beef mixture followed by a sprinkle of shredded cheddar cheese.

              Bake Again: Place the muffin tin back into the oven for an additional 5-7 minutes, or until the cheese is melted, bubbly, and perfectly gooey.

                Assemble: After baking, allow the taco cups to cool in the tin for a couple of minutes. Gently lift them out using tongs or a fork and transfer them to a serving platter.

                  Top & Serve: Finish off each mini taco cup by adding diced tomatoes, a handful of shredded lettuce, and a dollop of creamy sour cream. For an extra kick, garnish with fresh cilantro or jalapeño slices if desired.
