2 lbs pork shoulder or pork loin

1 cup fresh orange juice

1/2 cup freshly squeezed lime juice

6 cloves garlic, finely minced

1/4 cup fresh cilantro, chopped

1/4 cup extra virgin olive oil

2 teaspoons ground cumin

2 teaspoons dried oregano

1 teaspoon red pepper flakes (adjust according to spice preference)

Salt and freshly cracked black pepper, to taste

Zest of 1 orange

Zest of 1 lime

Prepare the Marinade: In a large mixing bowl, combine the fresh orange juice, lime juice, minced garlic, chopped cilantro, olive oil, ground cumin, dried oregano, red pepper flakes, orange zest, and lime zest. Whisk the mixture thoroughly until all ingredients are well blended and aromatic.

    Marinate the Pork: Take your pork shoulder or loin and place it in a large resealable plastic bag or a shallow dish. Pour the mojo marinade generously over the pork, ensuring it is completely covered. Seal the bag tightly, or cover the dish with plastic wrap, and refrigerate for a minimum of 4 hours; for the best flavor infusion, marinate overnight.

      Preheat the Oven or Grill: When you’re ready to cook, preheat your oven to 325°F (160°C) if you’re using that method. If grilling, set your grill to medium-high heat.

        Remove and Prepare the Pork: After marination, remove the pork from the marinade and let it rest at room temperature for about 30 minutes. Discard any remaining marinade, as it cannot be reused.
