Ingredients

For the crust:

1 cup almond flour

1/4 cup coconut oil, melted

2 tablespoons maple syrup

1/4 teaspoon sea salt

For the cheesecake filling:

1 cup cream cheese, softened (or use vegan cream cheese for a dairy-free option)

1/2 cup almond butter

1/4 cup powdered sugar (adjust to your preferred level of sweetness)

1 teaspoon vanilla extract

1/4 cup heavy cream (or substitute with coconut cream for dairy-free)

1 tablespoon lemon juice

For the topping:

Sliced almonds

Drizzle of almond butter or chocolate sauce

Instructions

Prepare the crust:

In a medium-sized mixing bowl, combine the almond flour, melted coconut oil, maple syrup, and sea salt. Stir the ingredients together until they are fully blended and achieve a crumbly texture.

      Form the crust:

Take the mixture and firmly press it into the bottom of mini tart pans or silicone muffin molds, creating an even layer. Use the back of a spoon to compact the mixture well. Once done, place the crusts in the refrigerator to set while you work on the filling.

          Make the cheesecake filling:

In a large mixing bowl, use a hand mixer to beat the softened cream cheese until it’s smooth and creamy. Add the almond butter, powdered sugar, vanilla extract, heavy cream, and lemon juice to the bowl. Mix thoroughly until all ingredients are well combined and smooth, making sure to scrape down the sides of the bowl as needed.

              Fill the crusts:

Spoon the prepared cheesecake filling into the chilled crusts, smoothing the tops with a spatula. Tap the molds gently on the countertop to release any trapped air bubbles, ensuring a smooth texture.

                  Chill:

Place the filled cheesecakes back into the refrigerator, allowing them to chill for a minimum of 4 hours or until fully set. If you're pressed for time, they can also set for at least 1 hour, although longer chilling will yield a better texture.

                      Serve:

Once the cheesecakes are set, carefully remove them from the molds. Top each cheesecake with a sprinkle of sliced almonds and a decadent drizzle of almond butter or chocolate sauce for an added touch of elegance.

                          Enjoy:

Serve these delightful, no-bake cheesecakes chilled and enjoy the burst of flavors and textures as they quickly disappear from your dessert table!
