1 cup fresh okra pods (approximately 6-8 pods)

4 cups water

2 tablespoons honey or agave syrup (adjust based on preference)

1/4 cup chia seeds

1/4 cup fruit-flavored gelatin (or vegan gelatin for a plant-based option)

1-2 cups mixed fruit (such as berries, mango, or citrus), chopped into bite-sized pieces

Fresh mint leaves for garnish

Prepare the Okra Water: Start by rinsing the okra pods thoroughly under cold water. Trim off the ends and slice the pods into small pieces, approximately 1/2 inch in size.

    Infuse the Water: In a medium-sized pot, bring 4 cups of water to a boil over medium-high heat. Once boiling, add the chopped okra pieces and reduce the heat to low. Allow the mixture to simmer for about 10-15 minutes, until the water takes on a slightly viscous quality. After simmering, remove the pot from heat and let it cool down.

      Strain the Mixture: After the mixture has cooled, place a fine mesh sieve over a large pitcher and strain the okra-infused water, discarding the okra pieces. You should have a smooth, nutrient-rich liquid ready for the next steps.

        Sweeten the Water: While the okra water is still warm, stir in your choice of honey or agave syrup. Mix until fully dissolved and allow the drink to cool to room temperature.

          Prepare the Chia Seeds: In a separate bowl, mix the chia seeds with 1 cup of water. Let this sit for about 10-15 minutes, allowing the chia seeds to expand and absorb the water until they form a gel-like consistency.

            Mix in the Gelatin: In another bowl, dissolve the fruit-flavored gelatin in 1 cup of boiling water, stirring thoroughly until fully dissolved. Set this mixture aside to cool slightly.

              Combine the Ingredients: In the pitcher with the okra water, add the chia seed gel, the dissolved gelatin, and the chopped mixed fruit. Gently stir everything together to combine, ensuring the fruit is evenly distributed.
