2 medium sweet potatoes, peeled and diced into small cubes

1 red bell pepper, diced

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon ground cumin

½ teaspoon chili powder (optional for extra heat)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it is hot enough to cook the dish evenly.

    Marinate the Chicken: In a medium mixing bowl, combine the chicken breasts with ½ cup of BBQ sauce, paprika, ground cumin, chili powder (if using), and a generous pinch of salt and pepper. Mix well until the chicken is thoroughly coated in the flavorful sauce. Set aside for a few minutes to marinate while you prepare the sweet potato hash.

      Cook the Sweet Potatoes: In a large, oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the diced sweet potatoes and sauté for about 5-7 minutes, stirring occasionally, until they begin to soften and develop a light golden color.
