Ingredients

1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 cup cooked quinoa (or replace with rice if preferred)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cream of chicken soup (store-bought or homemade)

1/2 cup milk (or substitute with chicken broth for a lighter dish)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

1 tablespoon olive oil

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (optional, for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it’s hot enough for baking the dish.

Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced chicken pieces. Season with garlic powder, onion powder, smoked paprika, salt, and black pepper. Sauté the chicken for about 5-7 minutes, or until it’s lightly browned and no longer pink in the center. Once cooked, remove the skillet from the heat.

Combine Ingredients: In the same skillet with the chicken, add the cooked quinoa (or rice), broccoli florets, cream of chicken soup, and milk. Use a spatula or spoon to mix everything together until all ingredients are evenly combined.

Add Cheese: Gently fold in the shredded cheddar cheese (be sure to reserve some for topping later). Stir until everything is well coated in the cheesy mixture.

Pour and Bake: Spread the combined mixture evenly in the skillet or transfer it to a greased baking dish. Sprinkle the reserved shredded cheddar cheese and grated Parmesan cheese on top for a deliciously cheesy crust.

Bake: Place the skillet or baking dish into the preheated oven. Bake for 20-25 minutes, or until the broccoli is tender and the cheese topping is golden brown and bubbly.

Garnish and Serve: After baking, carefully remove the dish from the oven and let it cool for a few minutes. If desired, garnish with freshly chopped parsley to add a pop of color. Serve hot and enjoy your delightful one-pan meal!
