1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain white rice

1 can (15 oz) diced tomatoes, undrained

2 cups low-sodium chicken broth

1 cup whole milk

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, finely diced

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp dried thyme

1/2 tsp freshly ground black pepper

1 tsp salt

1 tbsp olive oil

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to preheat while preparing the meal.

    Sauté Chicken: In a large, oven-safe skillet, heat the olive oil over medium heat. Once hot, add the diced chicken thighs. Sauté until they are golden brown and cooked through, about 5-7 minutes. Using a slotted spoon, remove the chicken from the skillet and place it on a plate; set aside.

      Cook Aromatics: In the same skillet, add the diced onion and minced garlic. Sauté for approximately 3-4 minutes, or until the onion becomes translucent and fragrant.

        Add Rice & Seasoning: Add the long-grain white rice to the skillet, along with the smoked paprika, thyme, black pepper, and salt. Stir well and cook for an additional 2 minutes, allowing the rice to toast slightly and absorb the flavors.

          Combine Ingredients: Carefully pour in the can of diced tomatoes (including their juice), chicken broth, and whole milk. Stir thoroughly to incorporate all the ingredients.

            Add Chicken and Vegetables: Return the sautéed chicken to the skillet, and stir in the frozen mixed vegetables until evenly distributed.

              Cover and Bake: Bring the mixture to a gentle simmer. Cover the skillet tightly with a lid or aluminum foil, then transfer it to the preheated oven. Bake for 25-30 minutes, or until the rice is tender and the liquid has been absorbed.
