One-Pan Honey BBQ Chicken Rice

4 boneless, skinless chicken thighs

1 cup jasmine rice, rinsed and drained

2 cups chicken broth

1/2 cup honey

1/2 cup BBQ sauce (your favorite variety)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 teaspoon salt

1 cup frozen mixed vegetables (such as peas, carrots, and corn)

2 green onions, sliced (for garnish)

Fresh parsley, chopped (optional, for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, blend together honey, BBQ sauce, smoked paprika, salt, and black pepper. Add the chicken thighs, ensuring they are thoroughly coated in the marinade. For the best flavor, allow the chicken to marinate for a minimum of 15 minutes, or refrigerate overnight.

    Sauté the Aromatics: In a large skillet or deep frying pan, heat olive oil over medium heat. Once hot, add the finely chopped onion and sauté until soft and translucent, approximately 3-4 minutes. Stir in the minced garlic and cook for an additional minute, or until fragrant.

      Brown the Chicken: Push the sautéed onions to one side of the skillet and add the marinated chicken thighs to the pan. Sear each side for about 4-5 minutes, or until they develop a golden-brown crust. Remove the seared chicken from the skillet and set aside.

        Add Rice and Broth: In the same skillet with the remaining juices, add the rinsed jasmine rice and stir quickly for about 1 minute to infuse the rice with flavor. Pour in the chicken broth and bring the mixture to a gentle boil.

          Combine & Cook: Once boiling, reduce the heat to low and place the browned chicken thighs back into the skillet. Cover the pan with a lid and let it gently simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

            Add Vegetables: After the rice is fully cooked, stir in the frozen mixed vegetables right into the skillet. Gently fluff the rice with a fork, then cover and let it sit for an additional 5 minutes to warm the vegetables through.

              Serve & Garnish: Remove the skillet from heat and allow it to cool for a couple of minutes. Serve the chicken over a bed of rice, drizzling any remaining BBQ sauce from the pan on top. For a finishing touch, garnish with sliced green onions and freshly chopped parsley if desired.
