12 oz (340g) pasta (such as penne or rigatoni)

1 lb (450g) Italian sausage (choose between mild or spicy)

4 cups fresh spinach, packed

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with their juice)

1 cup vegetable or chicken broth

1 tsp dried oregano

1 tsp red pepper flakes (optional, for added heat)

2 tbsp olive oil

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set it aside, reserving a small amount of the pasta water if needed for later.

    Cook the sausage: In a large skillet or frying pan, heat 2 tablespoons of olive oil over medium heat. Remove the Italian sausage from its casings and crumble it directly into the pan. Cook for 5-7 minutes, stirring occasionally, until the sausage is browned and cooked through. Use a spatula to break it into smaller pieces as it cooks.

      Add aromatics: Once the sausage is browned, add the finely chopped onion to the skillet. Sauté for an additional 3-4 minutes, or until the onions are soft and translucent. Then, stir in the minced garlic and cook for about 1 minute, until fragrant.

        Combine ingredients: Add the can of diced tomatoes (including the juice), the vegetable or chicken broth, dried oregano, and red pepper flakes (if using) to the skillet. Stir everything together, then bring this mixture to a gentle simmer, allowing the flavors to meld.
