  • 0.45 kg smoked sausage
  • 2 medium sweet potatoes
  • 1 medium red bell pepper
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 0.25 teaspoon crushed red pepper flakes
  • 2 tablespoons olive oil
  • None to taste salt
  • None to taste pepper
  • None for garnish fresh parsley

Instructions
 

  • Prepare the Vegetables: Begin by preparing your ingredients. Peel and dice the sweet potatoes into 1-inch cubes, and chop the onion and bell pepper. Mince the garlic and set aside.
  • Heat the Pan: In a large skillet over medium heat, add the olive oil. Once the oil is hot, add the sliced sausage. Cook for about 5-7 minutes, stirring occasionally, until the sausage is browned and crispy.
  • Add Sweet Potatoes: Stir in the diced sweet potatoes. Cook for approximately 10 minutes, stirring occasionally. You want the sweet potatoes to start to soften but not fully cooked yet.
  • Incorporate Vegetables: Once the sweet potatoes are beginning to soften, add the diced onion, bell pepper, and minced garlic to the skillet. Stir to combine and cook for an additional 5 minutes until the onions become translucent and the bell pepper softens.
  • Season the Mixture: Sprinkle the smoked paprika, thyme, crushed red pepper flakes (if using), salt, and pepper over the mixture. Stir well to evenly coat everything with the spices.
  • Cover and Cook: Reduce the heat to low and cover the skillet with a lid. Allow it to cook for another 10-15 minutes, stirring occasionally until the sweet potatoes are tender and cooked through.
  • Garnish and Serve: Once everything is cooked, taste and adjust the seasoning if needed. Remove from heat, garnish with freshly chopped parsley, and serve warm.

Notes

Optional red pepper flakes can be adjusted based on spice preference.
