1 cup canned black beans, thoroughly rinsed and drained

1 cup corn kernels (can be fresh, frozen, or canned)

1 packet taco seasoning (or use homemade for a personal touch)

1 cup diced tomatoes (fresh or canned, drained if using canned)

1/2 cup salsa (mild or spicy based on your preference)

1 cup shredded cheese (cheddar, Mexican blend, or your favorite)

1/4 cup fresh cilantro, chopped (optional, for garnish)

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it’s hot when the peppers go in.

    Prepare the Bell Peppers: Carefully slice off the tops of the bell peppers, removing the seeds and ribs from the inside. Lightly drizzle olive oil over the outsides of the peppers, then position them upright in a medium-sized baking dish.

      Cook the Filling: In a large skillet set over medium heat, add the ground beef or turkey. Cook it for about 5-7 minutes, breaking it into smaller pieces, until it’s nicely browned and fully cooked. Be sure to drain off any excess fat.
