4 large sweet bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup shredded mozzarella cheese (divided)

1 can (15 oz) diced tomatoes (with juice)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Prepare the Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes, creating hollow vessels for stuffing. Arrange the peppers upright in a greased or lined baking dish, ensuring they stand securely.

    Cook the Turkey: In a large skillet, pour the olive oil and heat it over medium heat. Add the finely diced onion and minced garlic, sautéing them for about 3-4 minutes, or until the onion turns translucent and aromatic.

      Mix the Filling: Introduce the ground turkey to the skillet, using a wooden spoon to crumble it as it cooks. Sauté for approximately 6-8 minutes, until the turkey is browned and fully cooked. Next, incorporate the chopped spinach, cooked quinoa, diced tomatoes (with their juices), Italian seasoning, salt, and pepper. Allow this mixture to cook for an additional 2-3 minutes, just until the spinach wilts. Remove from heat and stir in half of the mozzarella cheese until evenly combined.
