Ingredients

1 lb (450g) ground turkey

12 oz (340g) pasta of your choice (penne or rotini recommended)

4 cups fresh spinach, roughly chopped

3 cups chicken broth (or vegetable broth for a vegetarian option)

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 small onion, diced

3 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional for extra heat)

2 tbsp olive oil

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions

Sauté Turkey and Aromatics: In a large pot, heat the olive oil over medium heat. Once the oil is hot, add the diced onion. Sauté for about 3-4 minutes until the onion is translucent. Stir in the minced garlic and sauté for another minute, just until fragrant.

Brown the Turkey: Increase the heat to medium-high, then add the ground turkey to the pot. Cook for about 5-7 minutes, breaking it apart with a wooden spoon. Continue cooking until the turkey is browned and cooked through. Season the mixture with salt, pepper, and Italian seasoning to enhance the flavor.

Add Pasta and Liquid: Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the pasta of your choice. Reduce the heat to medium and stir frequently to prevent sticking. Cook for approximately 10-12 minutes, or until the pasta is al dente and most of the broth has been absorbed.

Add Cream and Spinach: After the pasta reaches the desired tenderness, stir in the heavy cream and chopped spinach. Cook for an additional 2-3 minutes until the spinach has wilted and the sauce has a creamy consistency.

Incorporate Cheeses: Remove the pot from the heat and stir in the shredded mozzarella and grated Parmesan cheeses. Mix until the cheeses have melted and are fully incorporated into the sauce. Taste and adjust seasoning with more salt, pepper, or red pepper flakes as preferred.

Serve: Ladle the cheesy turkey pasta into bowls. Optionally, garnish with fresh basil for a pop of color and added flavor. Serve immediately and enjoy your comforting one-pot meal!
