One-Pot Chicken Alfredo with Broccoli

1 pound boneless, skinless chicken breast, diced into bite-sized pieces

3 cloves garlic, finely minced

1 cup fresh broccoli florets

1 teaspoon dried Italian seasoning

2 cups low-sodium chicken broth

1 cup heavy (whipping) cream

8 ounces fettuccine pasta

1 cup freshly grated Parmesan cheese

Fresh parsley, finely chopped, for garnish

Sauté the Chicken: In a large, deep skillet or pot, heat the olive oil over medium heat. Once hot, add the diced chicken, seasoning generously with salt, pepper, and Italian seasoning. Cook the chicken, stirring occasionally, until it is golden brown and no longer pink in the center, approximately 5-7 minutes. Once cooked, remove the chicken from the pot and set it aside on a plate.

    Sauté Garlic and Broccoli: In the same pot, add the minced garlic and fresh broccoli florets. Sauté for about 2-3 minutes until the garlic becomes aromatic and the broccoli turns a vibrant green color.

      Add Broth and Pasta: Pour in the chicken broth and bring the mixture to a rolling boil. Once it reaches a boil, carefully add the fettuccine pasta, stirring well to ensure each piece is submerged in the broth. Reduce the heat to medium-low, cover the pot, and let it simmer for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

        Make the Alfredo Sauce: Lower the heat to a gentle simmer, then add the heavy cream to the cooked pasta. Stir continuously until the two are well combined. Gradually sprinkle in the grated Parmesan cheese, stirring constantly until the sauce becomes creamy and smooth.
