One-Pot Peach Mac and Cheese

2 cups elbow macaroni

2 cups fresh peaches (peeled, pitted, and diced)

3 cups vegetable broth

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup crumbled goat cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Once hot, add the diced peaches. Sauté the peaches for about 3-4 minutes until they start to soften and caramelize slightly, releasing their natural sweetness.

    Add the elbow macaroni to the pot along with the vegetable broth, whole milk, garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste. Stir well to combine all ingredients, and bring the mixture to a rolling boil.

      Once boiling, reduce the heat to medium-low. Cover the pot and let it simmer for about 10-12 minutes, stirring occasionally, until the macaroni is tender and most of the liquid has been absorbed.

        After simmering, remove the pot from heat. Gradually stir in the sharp cheddar cheese and crumbled goat cheese, mixing until the cheeses melt and create a creamy sauce. Taste and adjust the seasoning with additional salt and pepper if needed.

          Allow the mac and cheese to sit for a few minutes to let the sauce thicken further. When ready to serve, garnish with fresh basil leaves and additional peach slices if desired for an extra special touch.
