2 cloves garlic, minced

1 medium sweet potato, peeled and cut into ½-inch cubes

1 bell pepper (any color), diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (28 oz) crushed tomatoes

2 cups chicken or vegetable broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon cayenne pepper (adjust according to your spice preference)

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh cilantro, chopped, for garnish (optional)

Lime wedges, for serving (optional)

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper. Cook, stirring occasionally, until they soften and turn translucent, about 5 minutes. Then, stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
