1 pound ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 medium carrot, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juice)

2 tablespoons tomato paste

1 cup chicken or vegetable broth

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust according to your spice preference)

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup fresh cilantro, chopped (for garnish)

Heat the Oil: Pour the olive oil into a large heavy-bottomed pot or Dutch oven, then place it over medium heat. Allow the oil to warm up for about a minute.

    Sauté the Vegetables: Once the oil is shimmering, add the diced onion. Sauté until the onion turns translucent, which should take about 3-4 minutes. Next, stir in the minced garlic, diced bell pepper, and diced carrot. Cook these vegetables together for an additional 3-5 minutes, stirring occasionally, until they soften.

      Brown the Ground Turkey: Increase the heat to medium-high and add the ground turkey to the pot. Using a wooden spoon, break up the turkey as it cooks, stirring until it is fully cooked and no longer pink. This should take around 5-7 minutes.
