Ingredients

1 pound turkey cutlets

1 cup grated Parmesan cheese

1 cup panko breadcrumbs (for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried Italian herbs (such as basil, oregano, and thyme)

2 large eggs

2 tablespoons milk

Salt and freshly ground black pepper, to taste

Olive oil for frying

Fresh parsley, chopped (for garnish, optional)

Instructions

Prepare the Coating: In a shallow bowl, mix together the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, dried Italian herbs, and a pinch of salt and black pepper. Stir until all the dry ingredients are well combined.

Prepare the Egg Wash: In a separate bowl, crack the eggs and add the milk. Whisk them together until you have a smooth mixture. This egg wash will help the breadcrumb coating adhere to the turkey cutlets effectively.

Coat the Turkey: Season both sides of the turkey cutlets with salt and freshly ground black pepper. Dip each cutlet into the egg wash, ensuring it is completely coated. Then, transfer it to the breadcrumb mixture. Gently press the breadcrumbs onto the cutlet to ensure an even coating, then place each coated cutlet on a clean plate. Repeat this process until all cutlets are coated.

Heat the Oil: In a large skillet, pour in about 2-3 tablespoons of olive oil and heat over medium-high heat. You want enough oil to create a thin layer on the bottom of the skillet for frying.

Cook the Cutlets: Once the oil is hot (test by dropping in a breadcrumb; it should sizzle), carefully place the breaded turkey cutlets in the skillet in batches. Avoid overcrowding the pan to ensure even cooking. Fry the cutlets for about 4-5 minutes on each side, or until they turn golden brown and are fully cooked. The internal temperature should reach 165°F (74°C).

Drain Excess Oil: Once the turkey cutlets are cooked, transfer them to a plate lined with paper towels to absorb any excess oil.

Serve: Serve the crispy turkey cutlets hot, garnished with freshly chopped parsley if desired. Pair them with your choice of sides such as a vibrant fresh salad, steamed vegetables, or creamy mashed potatoes for a complete meal.
