Ingredients

1 pound fresh green beans, trimmed

1 cup panko breadcrumbs

½ cup freshly grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

2 large eggs

1 tablespoon olive oil

½ teaspoon dried Italian herbs (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and ensure even cooking.

Prepare the Green Beans: Rinse the fresh green beans under cold water and trim off the ends. Once trimmed, thoroughly pat them dry with a kitchen towel to eliminate any excess moisture, which will help them crisp up nicely during baking.

Set Up the Breading Station: Create your breading assembly. In a shallow bowl, whisk together the eggs and olive oil until the mixture is smooth and well combined. In a separate shallow bowl, combine the panko breadcrumbs, freshly grated Parmesan cheese, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. If you’re using the dried Italian herbs, fold them in at this stage for extra flavor.

Coat the Green Beans: Take each green bean and dip it first into the egg mixture, making sure to allow any excess to drip back into the bowl. Next, roll the green bean in the breadcrumb mixture, gently pressing the crumbs onto the bean to ensure the coating adheres well. Place the coated green beans on the prepared baking sheet in a single, even layer to guarantee crispiness.

Bake: Once all green beans are coated, place the baking sheet in the preheated oven. Bake for 15-20 minutes, or until the fries are golden brown and crispy. Remember to turn the green bean fries halfway through the cooking time to promote even browning and crispiness.

Serve: Remove the baking sheet from the oven and allow the crispy green bean fries to cool for a few minutes. Serve them warm as a delightful appetizer or side dish, along with your favorite dipping sauce for added flavor!
