Ingredients

2 ripe peaches, thinly sliced

4 slices of rustic crusty sourdough bread

200g creamy burrata cheese

1 tablespoon high-quality honey

1 tablespoon rich balsamic glaze

Fresh basil leaves, for garnish

Sea salt, to taste

Freshly cracked black pepper, to taste

Olive oil, for drizzling

Instructions

Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the sourdough slices on a baking sheet and lightly drizzle with olive oil for added flavor. Toast in the oven for approximately 8-10 minutes, or until they reach a golden brown hue and are delightfully crispy.

Prepare the Peaches: While the bread is toasting, rinse the peaches thoroughly and slice them into thin pieces. For an extra touch of flavor, consider grilling the peach slices for 2-3 minutes on each side until they are tender and show nice grill marks; this will enhance their sweetness and add a delightful smokiness.

Assemble the Toast: Once the bread has toasted to perfection, remove it from the oven and allow it to cool for a minute. Generously top each slice with the burrata cheese, using your fingers to gently break open the cheese, allowing its creamy interior to spread invitingly across the toast.

Add Peaches: Layer the freshly sliced peaches generously over the burrata on each toast, ensuring each bite is filled with fruity flavor.

Drizzle and Season: Lightly drizzle honey and balsamic glaze over the assembled toasts. Add a sprinkle of sea salt and freshly cracked black pepper to amplify the flavors and bring out the natural sweetness of the peaches and creaminess of the burrata.

Garnish: Top everything off with fresh basil leaves, torn or left whole, scattering them over the toast for a vibrant pop of color and a fresh aromatic touch.

Serve: Arrange the toasts on a rustic serving platter and serve immediately, allowing your guests to enjoy them while the bread is still warm and the burrata is irresistibly creamy.
