1 teaspoon paprika

2 cups fresh peaches, sliced (approximately 3 medium peaches)

1 small red onion, thinly sliced

3 cloves garlic, minced

1/4 cup balsamic vinegar

1 tablespoon honey

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon chopped fresh basil (for garnish)

Crumbled feta cheese (optional, for garnish)
