Ingredients

For the Cookies:

1 cup unsalted butter, softened to room temperature

3/4 cup packed brown sugar

3/4 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup fresh peaches, chopped (approximately 2 medium peaches)

For the Peach Ice Cream:

2 cups ripe peaches, peeled and diced (about 4 medium peaches)

1 cup heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon pure vanilla extract

A pinch of salt

Juice of 1 fresh lemon

Instructions

Make the Peach Ice Cream:

    - In a blender, add the chopped peaches, lemon juice, and sugar. Blend on high speed until the mixture is completely smooth and creamy.

      - In a large mixing bowl, combine the blended peach mixture with heavy cream, whole milk, vanilla extract, and a pinch of salt. Stir thoroughly until the ingredients are fully incorporated.

        - Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until the ice cream achieves a soft-serve texture.

          - Once done, transfer the ice cream to an airtight container. Freeze for a minimum of 4 hours, or until the ice cream is solid and scoopable.

            Prepare the Cookies:

              - Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking.

                - In a large mixing bowl, use an electric mixer to beat together the softened butter, brown sugar, and granulated sugar until the mixture is fluffy and light in color.

                  - Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

                    - In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined - be careful not to overmix.

                      - Gently fold in the chopped peaches, ensuring they are evenly incorporated throughout the dough.

                        - Using a tablespoon, drop rounded spoonfuls of cookie dough onto the lined baking sheets, spacing them about 2 inches apart to allow for spreading.

                          - Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

                            Assemble the Ice Cream Sandwiches:

                              - Take one cookie and place a generous scoop of peach ice cream on its flat side. Top it with another cookie, flat side down, pressing gently to create a sandwich.

                                - Repeat this process with the remaining cookies and ice cream.

                                  - For an added crunch, roll the edges of the sandwiches in chopped fresh peaches or crushed nuts if desired.

                                    - Arrange the completed ice cream sandwiches on a plate and return to the freezer for an extra 30 minutes to help them firm up.

                                      Serve and Enjoy:

                                        - When ready to serve, remove the ice cream sandwiches from the freezer and allow them to sit at room temperature for a few minutes to soften slightly.

                                          - Delight in sharing these scrumptious Peach Ice Cream Sandwiches with friends and family, savoring the tastes of summer in every delicious bite!
