6 small corn tortillas

1 ripe avocado

1 cup fresh pineapple, diced (reserve some for garnish)

¼ cup red onion, finely chopped

1 jalapeño, seeds removed and finely diced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Olive oil for brushing

Crumbled queso fresco or feta cheese (optional, for garnish)

Microgreens (optional, for garnish)

Prepare the Tortillas: Preheat your oven to 375°F (190°C). Lightly brush both sides of each corn tortilla with olive oil. Arrange them on a baking sheet in a single layer. Bake for approximately 10-12 minutes until they turn crispy and golden brown. Once done, remove them from the oven and allow them to cool.

    Make the Avocado Mixture: In a medium-sized bowl, mash the ripe avocado with a fork until smooth. Add the juice of one lime and a pinch of salt. Mix thoroughly until all ingredients are well combined, then set aside.

      Combine the Pineapple Salsa: In a separate bowl, combine the diced pineapple, finely chopped red onion, jalapeño, and fresh cilantro. Season this mixture with a pinch of salt and an additional squeeze of lime juice to enhance the flavors. Mix gently.
