1 cup mashed ripe bananas (approximately 2 medium bananas)

1 cup canned pumpkin puree (ensure it's not pumpkin pie filling)

1/2 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/4 cup chia seeds

Optional: 1/2 cup chopped walnuts or pecans

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5 inch loaf pan by greasing it lightly or lining it with parchment paper to ensure easy removal after baking.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, granulated sugar, packed brown sugar, vegetable oil, eggs, and vanilla extract. Using a whisk, mix thoroughly until the ingredients are smooth and fully integrated.

      Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt until evenly blended.

        Combine Both Mixtures: Carefully add the dry ingredients to the wet mixture in batches, stirring gently with a spatula until just combined. Avoid overmixing to keep the bread tender. Gently fold in the chia seeds and, if desired, the optional chopped walnuts or chocolate chips.
