4 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 tsp) active dry yeast

1/2 tsp salt

1/2 tsp ground cinnamon

1/2 cup whole milk, warmed to 110°F (43°C)

1/2 cup pumpkin puree

2 large eggs

1/4 cup unsalted butter, melted

For the Filling:

1/2 cup packed brown sugar

1/4 cup granulated sugar

2 tsp ground cinnamon

1/2 cup chopped pecans

1/4 cup unsalted butter, softened

1/2 cup pumpkin puree

For the Cream Cheese Glaze:

4 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 cup powdered sugar

1 tsp vanilla extract

2-3 tbsp milk (as needed for consistency)

Prepare the Dough: In a large mixing bowl, pour the warm milk and sprinkle the yeast over it. Allow this mixture to sit undisturbed for about 5 minutes, or until it becomes frothy. Next, add the pumpkin puree, granulated sugar, melted butter, and eggs. Mix until all the ingredients are well combined and smooth.

    Mix Dry Ingredients: In a separate bowl, whisk together the flour, salt, and ground cinnamon until evenly distributed. Gradually incorporate the dry ingredients into the wet mixture, stirring continuously until a shaggy dough forms.

      Knead the Dough: Turn the dough out onto a lightly floured surface. Knead the dough for 5 to 7 minutes, or until it becomes smooth and elastic. Place the kneaded dough into a greased bowl, cover it with a clean towel, and let it rise in a warm, draft-free place for about 1 hour, or until the dough has doubled in size.
