1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 cup beef broth or water

1 tablespoon olive oil

8 small corn or flour tortillas

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 medium tomato, diced

1 avocado, sliced

¼ cup sour cream (optional)

Fresh cilantro, for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes soft and translucent. Next, add the minced garlic to the pan and sauté for an additional 30 seconds, stirring frequently until fragrant.

    Brown the Beef: Push the sautéed onions and garlic to the side of the skillet. Add the ground beef to the center of the skillet and cook for 5-7 minutes. Use a spatula to break the beef into small pieces, cooking until it is browned and fully cooked through.

      Combine Beans and Seasoning: Once the beef is nicely browned, check for any excess fat and drain if necessary. Stir in the drained and rinsed black beans, followed by the taco seasoning, ensuring everything is well coated. Pour in the beef broth (or water) and bring the mixture to a simmer. Let it cook for an additional 5 minutes to allow the flavors to meld together beautifully.

        Warm the Tortillas: While the beef and bean mixture is simmering, prepare your tortillas by wrapping them in aluminum foil and placing them in a preheated oven set to 350°F (175°C) for about 10 minutes.
