1 lb boneless, skinless chicken breast, diced into bite-sized pieces

2 cups fresh broccoli florets

3 tablespoons olive oil, divided

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Penne: Begin by bringing a large pot of salted water to a boil. Add the penne pasta and cook it according to the package instructions until it is al dente, which should take about 10-12 minutes. In the last 2 minutes of cooking, add the broccoli florets to the pot. Once cooked, drain both the pasta and broccoli, and set aside.

    Cook the Chicken: While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the diced chicken breast. Season it generously with salt, pepper, and Italian seasoning. Cook the chicken for about 6-8 minutes, stirring occasionally, until it is golden brown and fully cooked.
