Quick Chicken Fajita Wraps with Avocado

1 lb (450g) boneless, skinless chicken breasts, cut into thin strips

2 tablespoons extra virgin olive oil

1 tablespoon fajita seasoning (store-bought or homemade)

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 small red onion, thinly sliced

Salt and freshly ground black pepper, to taste

4 large whole wheat tortillas

1 ripe avocado, mashed into a smooth spread

Juice of 1 fresh lime

Fresh cilantro leaves, roughly chopped (for garnish)

Optional toppings: shredded cheese, sliced jalapeños, or sour cream

Marinate the Chicken: In a medium mixing bowl, combine the sliced chicken, olive oil, fajita seasoning, salt, and pepper. Use your hands or a spoon to toss the chicken until each piece is evenly coated with the marinade. Allow the chicken to marinate for at least 15 minutes as you prepare the vegetables.

    Cook the Chicken: Preheat a large skillet over medium-high heat. Once hot, add the marinated chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through with a nicely browned exterior. Ensure there's no pink inside before removing the chicken from the skillet. Transfer it to a plate and set it aside.

      Sauté the Vegetables: In the same skillet, add the sliced red and yellow bell peppers along with the sliced red onion.
