4 whole wheat tortillas or wraps

1 cup fresh baby spinach

1 small cucumber, thinly sliced

1 large ripe tomato, diced

¼ cup feta cheese, crumbled (optional)

Marinate the Chicken: In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper until well combined. Place the chicken breasts into a resealable plastic bag or a shallow dish, then pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes to allow the flavors to infuse (marinating for up to 4 hours enhances the flavor even more).
