Marinating the salmon is a crucial step that not only infuses flavor but also helps tenderize the fish. The teriyaki marinade, made with soy sauce, honey, ginger, and garlic, works wonders in enhancing the overall taste. Ideally, you should allow the salmon to marinate for at least 30 minutes. However, if time permits, marinating for up to 2 hours in the refrigerator can elevate the flavor even more.

Ingredients

2 salmon fillets (6 oz each)

1/4 cup teriyaki sauce

1 tablespoon sesame oil

1 cup broccoli florets

1 cup mixed bell pepper slices (red, yellow, and green)

1 cup snap peas

2 cloves garlic, minced

1 inch ginger, grated

1 tablespoon soy sauce

1 teaspoon sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions

Marinate the Salmon: In a shallow dish, pour the teriyaki sauce over the salmon fillets, ensuring they are well-coated. Allow them to marinate for approximately 10-15 minutes while you prepare the vegetables.

Prepare the Veggies: In a large frying pan or wok, heat the sesame oil over medium-high heat. Add the minced garlic and grated ginger, quickly stirring for about 30 seconds until they become fragrant.

Stir-Fry the Vegetables: Add the broccoli florets, sliced bell peppers, and snap peas to the pan. Stir-fry the vegetables for about 4-5 minutes or until they're bright in color and slightly tender but still crisp. Drizzle the soy sauce over the vegetables, tossing everything to combine well. Once done, remove from heat and keep warm.

Cook the Salmon: In a non-stick skillet, preheat it over medium heat. Take the salmon fillets out of the marinade, discarding any remaining marinade. Place the fillets skin-side down in the skillet. Cook for around 4-5 minutes, then carefully flip them over and cook for an additional 3-4 minutes until the salmon is cooked through, with a slight caramelization on the surface.

Serve: On each plate, place a generous scoop of cooked rice or quinoa as a base. Top it with the stir-fried vegetable mix and a salmon fillet. For added flavor, drizzle any leftover teriyaki sauce from the pan over the salmon and garnish with sesame seeds.

Enjoy: Serve your Quick Teriyaki Salmon immediately while it's hot, and relish the vibrant mix of stir-fried veggies alongside!
