Ingredients

12 oz spaghetti or linguine

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

4 cloves garlic, minced

1/4 cup balsamic vinegar

1/4 cup extra virgin olive oil

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 cup fresh mozzarella balls, halved (or diced mozzarella)

1/4 cup grated Parmesan cheese (optional)

A pinch of red pepper flakes (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a vigorous boil. Add the spaghetti or linguine and cook according to package instructions until al dente, usually around 8-10 minutes. Before draining, reserve 1 cup of the pasta water. Drain the pasta and set it aside to keep warm.

Prepare the Tomato Mixture: In a spacious mixing bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, extra virgin olive oil, salt, black pepper, and red pepper flakes if you choose to use them. Toss the ingredients together until they are evenly combined and coated in the dressing. Let the mixture sit for about 10 minutes to enhance the flavors and allow the tomatoes to release their juices.

Combine Ingredients: Add the drained pasta to the bowl with the tomato mixture. Use tongs or a large spoon to toss everything gently, ensuring the pasta is thoroughly coated with the flavorful dressing. If you find the pasta mixture to be too dry, gradually stir in a bit of the reserved pasta water until you achieve your preferred consistency.

Add Mozzarella: Carefully fold in the fresh mozzarella balls, taking care not to break them apart as you mix. This will add a creamy texture to the dish.

Serve: Portion the pasta into serving plates or bowls. If desired, sprinkle grated Parmesan cheese over each serving for an extra layer of flavor. Garnish with a few fresh basil leaves. Serve immediately and enjoy the delightful flavors!
