Preheat Oven: Begin by preheating your oven to 325°F (160°C). Place a baking dish on the middle rack to prepare for the custard pots.

    Infuse Cream & Milk: In a medium saucepan, combine the heavy cream, whole milk, and instant espresso powder over medium heat. Stir the mixture continuously until it becomes hot and steamy (but do not allow it to boil). Once heated, remove the saucepan from the heat and let it steep for 10 minutes to enhance the espresso flavor.

      Whisk Egg Yolks and Sugar: In a mixing bowl, vigorously whisk together the egg yolks, granulated sugar, and a pinch of salt. Continue whisking until the mixture is light in color and slightly frothy.

        Temper the Eggs: Carefully pour the hot cream mixture into the egg yolk mixture in a slow, steady stream while stirring constantly. This process ensures that the eggs gradually warm up, preventing them from scrambling.

          Add Vanilla: After fully incorporating the cream, gently stir in the vanilla extract to infuse the custard with flavor.

            Strain the Mixture: To ensure a silky smooth custard, strain the mixture through a fine-mesh sieve into a clean bowl. Use a spatula to push the mixture through the sieve, discarding any solids.

              Pour into Ramekins: Divide the strained custard evenly among six to eight ramekins or small pots, filling each one about three-quarters full.

                Create a Water Bath: Carefully place the filled ramekins into the prepared baking dish. Pour hot water into the baking dish, ensuring it reaches halfway up the sides of the ramekins to create a moist environment for baking.

                  Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes. The custards are done when the edges are set, but the centers should remain slightly jiggly.

                    Cool and Chill: Once baked, remove the baking dish from the oven and allow the custards to cool in the water bath for about 10 minutes. Then, transfer the ramekins to the refrigerator to chill for at least 4 hours, or preferably overnight to develop the best flavors.
