1 cup whole milk

1/2 cup granulated sugar

1 tablespoon instant espresso powder

5 large egg yolks

1 teaspoon pure vanilla extract

Instructions
 

Preheat the Oven: Set your oven to 325°F (160°C). Choose a baking dish with high sides that can accommodate your ramekins or custard pots.

    Heat the Cream and Milk: In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and instant espresso powder. Over medium heat, stir the mixture continuously until the sugar and espresso powder have fully dissolved and the mixture is just about to simmer (small bubbles forming at the edges). Once ready, remove from heat and set aside.

      Whisk the Egg Yolks: In a separate mixing bowl, add the egg yolks along with the vanilla extract and a pinch of salt. Whisk vigorously until the mixture is smooth and well combined.

        Temper the Egg Yolks: Gradually pour the hot cream mixture into the egg yolk mixture while whisking continuously. This method, known as tempering, ensures the eggs incorporate smoothly without scrambling.

          Strain the Mixture: To achieve a silky-smooth custard, pour the blended mixture through a fine-mesh strainer back into the saucepan, discarding any coagulated bits.

            Pour into Pots: Carefully distribute the custard mixture evenly into small ramekins or custard pots, ensuring each has an equal amount of the creamy goodness. Arrange the pots inside the prepared baking dish.
