1 cup fresh broccoli florets

5 cloves of garlic, unpeeled

1 tablespoon olive oil (plus more for drizzling)

½ teaspoon salt

½ teaspoon black pepper

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 teaspoon dried oregano

1 tablespoon fresh lemon juice

Optional: red pepper flakes for added heat

      Prepare the Broccoli: While the garlic roasts, bring a pot of water to a boil for blanching. Add the broccoli florets and cook for 3-5 minutes, until they turn bright green but remain slightly crisp. Once cooked, drain the broccoli and set it aside.

        Blend the Garlic: After the garlic has cooled enough to handle, carefully squeeze the cloves out of their skins into a mixing bowl. Use a fork to mash the garlic until smooth.
