Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the broccoli, cauliflower, baby carrots, and red bell pepper.
In a small bowl, whisk together the melted butter, minced garlic, thyme, rosemary, oregano, salt, and pepper until well combined.
Pour the garlic herb butter over the mixed vegetables. Toss until all the veggies are evenly coated with the herbed butter mixture.
Spread the coated vegetables in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through to ensure even cooking.
Once roasted, remove the veggies from the oven. Transfer to a serving platter, garnish with freshly chopped parsley, and serve with lemon wedges on the side for an extra zing.
