  • 2.0 cups broccoli florets
  • 2.0 cups cauliflower florets
  • 2.0 cups baby carrots
  • 1.0 string red bell pepper, cut into strips
  • 4.0 tablespoons unsalted butter, melted
  • 4.0 cloves garlic, minced
  • 1.0 teaspoon dried thyme
  • 1.0 teaspoon dried rosemary
  • 1.0 teaspoon dried oregano
  • 0.0 to taste salt
  • 0.0 to taste pepper
  • 0.0 to garnish fresh parsley, chopped
  • 0.0 for serving lemon wedges

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the broccoli, cauliflower, baby carrots, and red bell pepper.
  • In a small bowl, whisk together the melted butter, minced garlic, thyme, rosemary, oregano, salt, and pepper until well combined.
  • Pour the garlic herb butter over the mixed vegetables. Toss until all the veggies are evenly coated with the herbed butter mixture.
  • Spread the coated vegetables in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through to ensure even cooking.
  • Once roasted, remove the veggies from the oven. Transfer to a serving platter, garnish with freshly chopped parsley, and serve with lemon wedges on the side for an extra zing.
