Ingredients

1 large head of cauliflower, cut into florets

4 cloves of garlic, unpeeled

2 tablespoons olive oil, divided

1/4 cup unsalted butter, softened at room temperature

1/4 cup cream cheese, softened

1/2 cup milk (or plant-based milk of your choice)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: A sprinkle of smoked paprika or finely chopped chives for an extra flavor boost

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) to heat up while you prep the ingredients.

Roast the Garlic: Place the unpeeled garlic cloves on a baking sheet. Drizzle with 1 tablespoon of olive oil and toss gently to coat. Roast in the preheated oven for about 20-25 minutes, or until the garlic is soft and golden brown. Once done, take them out and let cool slightly before peeling the skins away.

Prepare the Cauliflower: Meanwhile, fill a large pot with salted water and bring it to a rolling boil. When the water is boiling, add the cauliflower florets and cook for approximately 8-10 minutes, until they are fork-tender. After cooking, drain the cauliflower well and set aside.

Combine Ingredients: In a large mixing bowl, add the drained cauliflower along with the peeled roasted garlic cloves, softened butter, cream cheese, and the remaining tablespoon of olive oil.

Mash to Perfection: Using a potato masher or an immersion blender, mash the mixture until it reaches a smooth and creamy consistency. Gradually pour in the milk, mixing until you achieve your desired creaminess level.

Season to Taste: Give the mashed cauliflower a taste test and season generously with salt and black pepper. For an added touch of flavor, you can include a sprinkle of smoked paprika or fresh chives in this step.

Serve with Style: Scoop the creamy garlic mashed cauliflower into a serving bowl. Garnish generously with freshly chopped parsley for a burst of color and flavor.

Enjoy this indulgently creamy and herby dish as a delightful low-carb alternative to traditional mashed potatoes!
