2 large sweet potatoes (approximately 2 pounds)

1 whole head of garlic

3 tablespoons olive oil

1/4 cup unsalted butter (can substitute with a vegan alternative)

1/2 cup milk (choose dairy or plant-based)

Freshly ground black pepper, to taste

1/4 teaspoon ground nutmeg (optional for added flavor)

Roast the Garlic: Begin by preheating your oven to 400°F (200°C). Take the whole head of garlic and slice approximately 1/4 inch off the top to expose the cloves. Drizzle 1 tablespoon of olive oil over the exposed cloves, then wrap the head of garlic tightly in aluminum foil. Place the wrapped garlic in the oven and roast for 30-35 minutes, or until the cloves are soft, fragrant, and caramelized. Once done, remove it from the oven and allow it to cool slightly.

    Prepare the Sweet Potatoes: While the garlic is roasting, peel the sweet potatoes and cut them into even-sized chunks (approximately 1-2 inches). In a large pot, add the diced sweet potatoes and cover them with water. Bring the water to a boil over medium-high heat, then reduce the heat and let it simmer. Cook for 15-20 minutes or until the sweet potatoes are fork-tender.

      Mash the Sweet Potatoes: Once the sweet potatoes are cooked, drain them thoroughly and return them to the pot. Squeeze the roasted garlic cloves out of their skins and add them to the sweet potatoes. Then incorporate the remaining 2 tablespoons of olive oil, butter, milk, salt, black pepper, and ground nutmeg (if using).
