1 lb (450g) rigatoni pasta

1 lb (450g) Italian sausage (choose between mild or spicy)

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 can (15 oz) tomato sauce

2 teaspoons dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional, for added heat)

Salt and pepper, to taste

1 cup ricotta cheese

1 large egg

2 cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the rigatoni and cook until al dente, about 8-10 minutes. Drain the pasta and set it aside.

      Brown the Sausage: Heat a large skillet over medium heat. Crumble the Italian sausage into the skillet and cook until it's browned and fully cooked, about 5-7 minutes. Use a wooden spoon to break it into smaller pieces. Once done, remove it from the skillet and drain any excess fat if necessary.

        Sauté the Vegetables: In the same skillet, add the diced onion and sauté until it turns translucent, which should take about 3-4 minutes. Next, add the minced garlic and sauté for an additional minute until fragrant.

          Make the Sauce: Return the cooked sausage to the skillet. Then, add the crushed tomatoes, tomato sauce, dried oregano, dried basil, red pepper flakes (if using), and season with salt and pepper. Stir everything together and let it simmer for about 10 minutes, so the flavors can meld beautifully.
