2 salmon fillets (6 oz each)

1 tablespoon olive oil

Salt and pepper, to taste

1 cup fresh blueberries

1 tablespoon honey

1 tablespoon balsamic vinegar

1 tablespoon soy sauce

1 teaspoon fresh ginger, grated

1 tablespoon lemon juice

1 head of butter lettuce, leaves carefully separated

1 medium cucumber, julienned

1 small carrot, julienned

Fresh cilantro or mint leaves, for garnish (optional)

Prepare the Blueberry Glaze: In a small saucepan, combine the blueberries, honey, balsamic vinegar, soy sauce, grated ginger, and lemon juice. Set the pan over medium heat and stir frequently, allowing the blueberries to cook down and release their juices—this should take about 5-7 minutes. To achieve a thicker consistency, use a fork or potato masher to mash some blueberries. Continue to simmer the mixture for an extra 2-3 minutes until it slightly thickens. Once done, remove the saucepan from the heat and set it aside.

    Cook the Salmon: Preheat your grill or stovetop grill pan to medium-high heat. Brush the salmon fillets with olive oil, then season both sides with salt and pepper. Place the fillets skin-side down on the grill. Grill for 4-5 minutes before flipping and cooking for another 3-4 minutes, or until the salmon flakes easily when tested with a fork. Remove the fillets from the grill and let them cool slightly.

      Assemble the Wraps: While the salmon cools, take a clean butter lettuce leaf and lay it flat on a serving plate. Add a handful of julienned cucumber and carrot to the center of the leaf. Once the salmon is cool enough to handle, flake it into bite-sized pieces and place these on top of the vegetables.
