2 medium sweet potatoes, peeled and diced into bite-sized cubes

1 medium onion, finely diced

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil, divided

2 tablespoons fresh parsley, chopped (for garnish)

4 large eggs (optional, for a hearty addition)

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once the oil is shimmering, add the diced sweet potatoes. Season lightly with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until they are tender and develop a golden crisp on the edges.

    Cook the Turkey: Push the cooked sweet potatoes to one side of the skillet. In the same skillet, add the remaining tablespoon of olive oil to the empty space. Add the ground turkey, breaking it apart with a spatula or wooden spoon. Cook, stirring occasionally, for 5-7 minutes until the turkey is browned and no longer pink.

      Add Aromatics: Incorporate the diced onion, minced garlic, and red bell pepper into the skillet with the turkey. Cook for an additional 3-4 minutes, stirring frequently, until the vegetables are softened and fragrant.
