1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

1 cup uncooked brown rice

6 cups low-sodium chicken broth

1 cup frozen peas

1 tsp dried thyme

1 tsp dried rosemary

½ tsp paprika

Salt and pepper to taste

2 tablespoons olive oil

2 cups fresh spinach, roughly chopped

Lemon wedges for garnish

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Olive Oil: In a large pot, place over medium heat and add 2 tablespoons of olive oil. Allow it to heat until shimmering, which should take about 1-2 minutes.

    Brown the Turkey: Carefully add 1 lb of ground turkey to the pot. Using a spatula, break it apart and stir occasionally. Cook for 5-7 minutes until the turkey is no longer pink and is lightly browned.

      Sauté Vegetables: Into the same pot, add 1 diced onion, 3 minced garlic cloves, 2 diced carrots, and 2 diced celery stalks. Sauté for an additional 5-7 minutes, stirring frequently, until the vegetables soften and the onion becomes translucent.

        Spice it Up: Sprinkle in 1 tsp of dried thyme, 1 tsp of dried rosemary, and ½ tsp of paprika. Season with salt and pepper to taste. Cook for another 1-2 minutes, stirring well, until the spices are fragrant and evenly distributed.

          Add Rice and Broth: Pour in 1 cup of uncooked brown rice along with 6 cups of low-sodium chicken broth. Stir everything together until well combined.

            Simmer: Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot with a lid, and allow it to simmer for about 30-35 minutes or until the rice is tender and fully cooked.
