1 lb (450g) medium shrimp, peeled and deveined

1 head of butter lettuce or romaine, gently separated into leaves

1 cup pineapple, finely diced (fresh or canned)

1/4 cup soy sauce

1/4 cup honey or agave syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, thinly sliced (for garnish)

1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Salt and pepper, to taste

Toasted sesame seeds (for garnish)

Prepare the Pineapple Glaze: In a small saucepan, combine the finely diced pineapple, soy sauce, honey or agave syrup, rice vinegar, sesame oil, minced garlic, and grated ginger. Heat over medium heat until the mixture reaches a boil, then reduce the heat to low. Allow it to simmer for approximately 10-15 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and set aside to cool.
