Ingredients

For the Shrimp Skewers:

1 pound large shrimp, peeled and deveined

2 tablespoons extra virgin olive oil

2 garlic cloves, finely minced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon chili flakes (adjust to your spice preference)

Juice of 1 fresh lime

Salt and black pepper to taste

8 skewers (wooden or metal)

For the Mango Salsa:

1 ripe mango, diced into small cubes

1 small red onion, finely chopped

1 small red bell pepper, diced

1 jalapeño, deseeded and minced (optional for added heat)

1/4 cup fresh cilantro leaves, roughly chopped

Juice of 1 fresh lime

Sea salt, to taste

Instructions

Prepare the Marinade: In a medium-sized mixing bowl, whisk together the olive oil, minced garlic, smoked paprika, ground cumin, chili flakes, lime juice, and a generous pinch of salt and pepper until well combined. This zesty marinade will infuse your shrimp with flavor.

Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, ensuring they are evenly coated on all sides. Cover the bowl with plastic wrap and set it aside to marinate for at least 15-20 minutes as you prepare the salsa.

Make the Mango Salsa: In another bowl, combine the diced mango, chopped red onion, diced red bell pepper, minced jalapeño (if using), chopped cilantro, lime juice, and a pinch of sea salt. Gently toss all the ingredients together to combine, allowing them to sit for a moment to let the flavors meld beautifully.

Skewer the Shrimp: While your grill or grill pan heats up to medium-high temperature, soak wooden skewers in water for 30 minutes to prevent burning during grilling. Carefully thread 4-5 marinated shrimp onto each skewer, leaving a little space in between each shrimp for even cooking.

Grill the Shrimp: Place the skewers on the preheated grill and cook for approximately 2-3 minutes on each side. Keep an eye out for the shrimp to change to a lovely pink and opaque color, indicating that they’re thoroughly cooked (internal temperature should reach 120°F).

Serve: Once the shrimp are done grilling, remove them from the skewers and arrange them neatly on a serving platter. Drizzle any remaining marinade over the skewers for added flavor, and serve them hot alongside the refreshing mango salsa.

Garnish: For an appealing presentation, garnish the dish with fresh lime wedges and sprigs of cilantro, adding a pop of color and freshness.
