1 cup whole milk

1/2 cup pure honey

2 tablespoons dried culinary lavender

5 large egg yolks

1 teaspoon vanilla extract

Infuse the Milk: In a medium saucepan, combine the heavy cream, whole milk, honey, and dried lavender. Heat the mixture over medium-low heat, stirring occasionally, until it becomes hot but does not boil (approximately 5-7 minutes). Once heated, remove the saucepan from the heat and let it steep for about 30 minutes to allow the lavender to impart its floral flavor.

    Prepare the Custard Base: In a separate mixing bowl, whisk the egg yolks until they are pale and slightly thickened. Gradually add one cup of the warm cream mixture into the egg yolks while whisking continuously to temper the eggs, preventing them from curdling.

      Combine & Cook: Return the tempered egg yolk mixture to the saucepan with the remaining cream mixture. Cook this combined mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Ensure the mixture does not reach a boiling point.

        Strain the Mixture: Once thickened, remove the saucepan from heat and strain the custard through a fine-mesh sieve into a clean bowl. This step removes the lavender buds. After straining, stir in the vanilla extract and add a pinch of salt.

          Chill the Mixture: Allow the custard to cool to room temperature. Once cool, cover the bowl and refrigerate for at least 4 hours or overnight until it is fully chilled.

            Churn the Ice Cream: When ready to churn, pour the chilled custard into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

              Freeze the Ice Cream: Transfer the soft ice cream into an airtight container. Place it in the freezer and allow it to firm up for at least 4 hours.
